Pumpkin Pie


It’s that time of year again – the leaves are changing colors into bright reds, oranges, & yellows and there’s a chill in the air. It’s also time for homemade pumpkin pie, a comfort food that brings to mind memories of Thanksgiving and cozy fall days spent by a warm fire. Enjoy this treat from the harvest to your plate.

Pumpkin Pie
3 eggs
¾ cup brown sugar
1 can pumpkin
1 ½ cups milk
¾ tsp. salt
1 tsp. ginger
¼ tsp. cloves
1 ¼ tsp. cinnamon
1 pie crust

In a mixing bowl beat eggs well and then add in sugar and combine with a whisk or an electric mixer. Add in the pumpkin (canned or steamed fresh pumpkin) and mix well. Add in all the spices and milk, then mix.

Pour into uncooked pie crust. Bake at 350 degrees for about 60 min. Bake until a knife inserted into the center of the pie comes out clean. Make sure the pie cools completely before cutting.

If desired, add whipped cream to each slice!
