Blueberry Cobbler

This is one cobbler that will leave you coming back for more:

"Several years ago, there was a server working here named Alan. (Hi Alan!) During his time with us, he found that he LOVED our blueberry cobbler. Hot or cold, small bite or bowlful, Alan was hooked. Cobbler isn't something you can find on every restaurant menu, and Dysart's has had years to tweak the recipe to just how Alan liked it. Alas, after working a summer's worth of late-night shifts, Alan went off to college.

After saying our goodbyes and good lucks, it wasn't too long before fall break and we had a visit from Alan who just needed some cobbler. We soon came to expect to see Alan visiting over school vacations and summers, and to this day we get the occasional call from him to make sure it is available when he comes in."

Try our blueberry cobbler and find out for yourself why it makes people come back for more!

And to make this yummy cobbler at home, here's the recipe:

Filling:

1 ½ cups sugar
¼ cup + 2 tbsp. flour
2 tbsp. corn starch
½ tsp. cinnamon

Topping:

1 ¾ cups flour
1 tbsp. + 1 tsp. baking powder
½ tsp salt
¼ cup vegetable oil
1 egg beaten
1 ½ cups milk

Fill a 9 X 9 pan ¾ full of blueberries. Mix the ingredients for the filling and add them to the berries. Mix into the berries.

In a separate bowl mix the ingredients for the topping. Take the topping mixture and evenly pour it onto the berry mixture.

Bake at 325 degrees for about 2 hours. Turn in the oven half way through the cooking.

*You can do this with most any fruit. Try raspberries, strawberries, cherries, peaches, or any other fruit that you desire.
