A wonderful combination - pumpkin and chocolate. This bread is great any time of the year, not just in the fall. It can also be made into muffins.
2 ½ cups all purpose flour
2 eggs
1 ½ cups sugar
½ tsp baking soda
2 tsp baking powder
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp ground cloves
½ cup vegetable oil
1 (16oz.) can pumpkin
1 cup chocolate chips
1 cup walnuts (optional)
1. In a bowl combine sugar, oil, and eggs; beat until fluffy.
2. Mix in pumpkin well with a whisk or on low if using a mixer.
3. In a small bowl combine all dry ingredients and mix together. Make
sure there are no lumps and everything is well combined.
4. Add dry ingredients to pumpkin mixture until all moistened. Do not
over mix.
5. Pour into a greased 5 x 9 inch loaf pan.
Bake at 350 degrees for 55 to 60 minutes. Check with tooth pick to see
if done. Pick should come out clean.
Variation:
Instead of chocolate chips you can add raisins to make pumpkin nut
bread. You can also choose to make this batter into muffins – just decrease the
cooking time and make sure the tins are well greased.
